Strawberry and fresh mint kvass

This is such a simple drink to make that is both delicious and health-promoting. It comes complete with vitamins, minerals and antioxidants, takes minutes to make and only three days to ferment. You can use different fruit combinations such as blackberries and basil or lemon balm and pear. Strawberry and fresh mint is my current favourite.

 Makes a 1 -litre jars worth


  • A punnet of organic strawberries

  • 1 tbsp of unpasteurised or raw honey

  • A few leaves of fresh mint

  • Filtered water



Slice the strawberries and put them in a clean 1-litre jar until it is quarter full of fruit.

Add the water, honey and mint leaves, ensuring that there is sufficient water to fill the jar to the top, allowing for 2.5cm headspace. This allows for pressure to safely build. The honey will dissolve naturally so no need to stir.

Tightly cover the jar and set it on your kitchen worktop. Give it a gentle shake two to three times a day.

On day three, strain out and discard the fruit and pour into a clean bottle. This will keep for up to a week in the fridge.

Serve chilled.
